This site details some projects using electronics, microprocessors and PCs.
The projects are fairly complete, so you should be able to reproduce them yourself.
GPS logger
The GPS logger was written for a magazine in 2000, so may be a little out of date by todays standards. A Garmin GPS module is used together with a remote antenna. The coordinates from the Garmin module are read into the Rabbit microprocessor, and saved to its ram memory. The data is read by a Delphi PC program and displayed as a plot on a map.
